Lemon Coconut One Minute Cake |
Oh how I love thee, One Minute Cake. I'm not very good at planning my meals ahead (I know, I know, shame on me). Sometimes I stand in the pantry, staring at all the junk food in there for my family of carb-etarians. The junk whispers "eat me, I'm so good" or "one Oreo won't hurt". (exactly the reasons why you should have a game plan and decide your low carb meals in advance!) This is where the One Minute Cake becomes crucial. I've made a couple of flavors (
PEANUT BUTTER CHOCOLATE ONE MINUTE CAKE,
ONE MINUTE BREAD, and
INDIVIDUAL MICROWAVE COBBLER) but I think this Lemon Coconut is my new favorite. The ingredients mix is spot on to have a good cake texture, a bit moist and fluffy. This was an amazing emergency dessert and I enjoyed every bite!

1 serving
4.5 net carbs per serving
1 TBSP coconut oil (in liquid form, put in microwave for a few seconds)
1 egg
1 tsp water
1/2 tsp lemon extract
2 TBSP granular Splenda (or your sweetener of choice)
2 TBSP almond flour
1 TBSP coconut flour
1 TBSP shredded unsweetened coconut
pinch of salt
Mix all ingredients in a mug with a fork until thoroughly combined. Microwave for one minute (microwave ovens may vary).
I know this may be a dumb question but that never seems to stop me ;)
ReplyDeleteDo you know if there is sugar in like regular McCormick Lemon Extract?
None of the flavors list it but it does list Alcohol, I am wondering if they are sugar alcohols because the extracts taste sweet....I am just wondering if it effects blood glucose levels and if it does what brand you recommend that doesn't.

Pure extracts (including McCormick) does not have any sugar or sugar alcohols. According to their website, it is 83% alcohol, water and lemon oil. The website also states that it has no nutritional value, meaning there aren't any carbs, sugars, calories, fat, etc.

DeleteJust made this tonight. Was needing a pick me up after a long day! I didn't have the coconut, but had some coconut extract... let me tell you! This little cake is a shocker! For the simple ingredients in it, it is really light and refreshing! Hit the spot and didn't leave me feeling like I still needed something else. I am looking forward to changing up the flavors depending on my mood! Thanks Layla! I love your recipes! :)

ReplyDeleteUnsalted stick butter is generally my replacement for coconut oil but use whatever you have available!
Deletehi! I'm new in the keto world and it is impossible for me to find coconut oil AND coconut flour (I've read on how to make cocount flour at home and I'll give it a try) the question is Can I replace it with butter in every recipe I find it? I read in one of your replies you suggest butter

I just made this for my breakfast! I didn't have lemon extract but I did have orange. OMG I LOVE IT!!!! It's a fast, nutritious, and totally delicious creation. Thank you!!!
ReplyDeleteI just made this didn't have all the ingredients... but had to try anyway. I left out the shredded coconut and switch lemon for vanilla! Then I my inner cookie monster took over...I added 60% cocoa chocolate chips...about a tablespoon full. Omg! This was dangerously good! Couldn't have daily but a nice treat when cookie monster starts crying out! Lol!
ReplyDeleteI've made this twice now. The first time I fixed it according to the recipe and cooked it in the microwave. I'm not a fan of microwave cooking so it was just okay. Plus I think my lemon extract was not all that fresh. Just tried it again, swapping caramel extract for the lemon and cooked in the oven. It was delicious!! Very cakey, nice and moist. My kids even liked it, and they're hard to impress when it comes to any cake/bread type recipes made with almond flour.
