Fried Cabbage with Bacon and Onions |

6 servings (if using as a side dish)
6 net carbs per serving
1 medium head green cabbage, chopped loosely
3 slices bacon, chopped
1/4 large onion or 1/2 small to medium onion, chopped
1 TBSP Worcestershire sauce (optional)
salt & pepper to taste
In a large pan cook the chopped bacon over medium to medium-high heat. Once the fat renders off and there's plenty of bacon grease in the pan, add the chopped onion. Right when the bacon has just started to crisp, add the chopped cabbage, salt, pepper and Worcestershire sauce (optional but I like the tiny bit of smokey tang that it gives some foods). Stir occasionally until cabbage is softened. I like some pieces to get a little pan browned so I don't stir very often. Taste before serving as you may need to add more salt and pepper depending on your preference.
Tryed it and loved it! It would be great as a side dish with an asian meal!

DeleteThis is the only way I know how to make cabbage and noodles. Many people leave out the bacon grease, but that takes away the flavor! Once in awhile you have to splurge.
ReplyDeleteI just chop up cabbage, get skillet hot, melt butter, put cabbage in, salt and pepper it, and when starts steaming I turn stove off, cover with lid and finish rest of supper. The steaming makes it delicious and it doesn't stink the house up either like boiling the cabbage. I will try your extra ingredients also. thnx

ReplyDeleteHi Jennifer, cabbage is a comfort food so I'd probably serve it with either a steak of a chicken fried steak (low carb version of course, recipe on my page), grilled or fried chicken, etc. I would probably stay away from anything that has a sauce so the sauce doesn't stray into the cabbage on the plate.
DeleteOur family LOVES this - it is a tradition for all important gatherings: Thanksgiving, Christmas, and my birthday. And any time I grave it! Our family recipe adds a can of tomatoes (crush them up), and a little bit of sugar. We cook for a LONG time on simmer. Delicious! Helen (NV transplant from ND)

ReplyDeleteIt depends on how crunchy or wilted you like your cabbage. I would say anywhere from 5 to 15 minutes. If you aren't sure, taste test ever so often until it's a texture you like.
DeleteBrown sugar is a nice added ingredient if you like sweet.
ReplyDeleteThat sounds wonderful but us low carbers cannot have brown sugar. A bit of Splenda or Stevia would be a great touch though!
DeleteTry with shredded Brussel sprouts, can add a bit of garlic and fennel with the onions. Cook until some of the shredds are starting the brown to really caramelize the flavor.

DeleteImportant announcment for the sweet lovers:) Sweet and Low has their Brown Sugar back on the shelves. I had some from YEARS ago and only used it for Very special occasions. (didn't even care about an expiration date!) Anyway I use it for green beans. Open couple of cans of cut green beans and pour off juice~~save the juice. Brown your chopped bacon in pan, add a tiny spoonful of S&Low brown sugar (a little spoon comes with it~just use one little spoonful) stir this around in your bacon grease to kinda make a glaze. Pour in the green beans and let them sizzle and begin to cook down. Add some of the reserved bean juice to keep them from scorching. By the time you cook a little, add a little juice they taste like home canned green beans~YUM! P.S. I live in Missouri and got the sweet and low brown sugar at WalMart. Maybe I should buy a couple of boxes and stock up! Makes Everything taste better! Will definitely try it in this cabbage recipe too.

ReplyDeleteBe sure to set aside a half a cup per person to add to your 2 egg scramble for breakfast the following morning. HEAVEN!! I first heat up the cabbage, bacon, onions and garlic. Stir in scramble eggs. Enjoy with a cup of hot tea.

ReplyDeleteCabbage is almost it's own food group in the South, a staple that nourished pioneers, mountaineers, Depression families, but now (last night in fact) if I make up a big skillet of this and a big iron skillet of buttermilk cornbread, my husband of 44 years is in heaven. He also loves when I occasionally add slices of kielbasa sausage. Adding tart apple slices, sautéed carrot slices, are also options. Good eating!

DeleteI make this all of the time. I find the bacon makes it to greasy. I use polish kielbasa (turkey) this will help get the flavor you are looking for without all the fat. You can spray your pan with non stick spray or use a little butter.

ReplyDeleteIt may be low carb but it is not healthy at all. You don't need low carb if you eat the right carbs. Fruits, veggies,grains, etc. This may taste good but it adds to a heart attack on a plate.

ReplyDeleteIn the 4 years we've been married I've found it very hard to get my hubby to eat anything but fries with his meat. But he will eat fried cabbage or fried cauliflower. I microwave the cauliflower for 3-5 minute first & sometimes add some garlic. Yum!

ReplyDeleteI often do this, but I cook half green/half red cabbage and half white/half red onion. DELISH, and maybe, just maybe a sprinkle of tumeric or curry powder. Just a touch, mind.

ReplyDeleteI only used about a quarter of an onion diced to give it a little bit of onion, but not quite as many carbs. It is absolutely delicious!! One of my favorite meals!
ReplyDeleteWhen I was a little girl (a l-o-n-g time ago LOL) my grandfather used to parboil the cabbage and then drain it and put it into a frypan with butter and bacon and that is how Poppa introduced me to cabbage ... to this day it is my favourite way to eat cabbage!
