Cheese Crackers

Crackers, yes I said it, CRACKERS while low-carbing!!  I am seriously addicted to these and tend to make large batches to munch on when the mood strikes.  They really are the angel on your shoulder when the devil in the kids snack drawer starts calling your name.  I like mine plain as I think they have a great flavor on their own but I've heard plenty of people adding a dash of seasoned salt, onion powder, garlic powder, etc prior to cooking.  As you can see, they aren't the most beautiful crackers but they are delish! My kids and hubs like them too so you know it's good if the carb-lovers will snack on them. *INDUCTION FRIENDLY*

1/2 carb for 16 crackers (I slice of Deluxe American cheese)

Ready for the long list of ingredients?? :)
1 slice of Deluxe American cheese (MUST be DELUXE American, other sliced cheeses don't quite cook up correctly)
Parchment paper

That's it!
Cut the piece of cheese into 16 squares then put on a piece of parchment paper, lining up around the edges of the paper.  Do not put any in the center.  Stick in the microwave for 35-60 seconds (they come out perfect in my microwave at 38 seconds but they are all different.  Peel off each chip and ta-da, cheese crackers!!

  1. Thank you! Thank you! Thank you! These crackers are fantastic. I didn't think I would ever bite into another cruncy "cracker" again. Mine take about 50 seconds. They are so simple to make and taste amazing. And lets not forget they are only 1/2 carb for sixteen of them. I didn't know how they would store but after a few days in a container on the counter they are still just as crunchy. Thanks!

    1. I make these sooo often that I've started playing with the flavors. Before microwaving sprinkle on some dill, or cayenne, or garlic or whatever flavors you love in crackers. The flavor cooks into them while they are microwaving. Yum! Oh, and I usually make large batches and keep them in a covered container on the counter for days. It's great to have a crunchy snack available whenever the craving hits.

    2. Do you refrigerate them after you take them out? I left mine in the Microwave 60 seconds & they still were too soft. I used the Deluxe American Cheese. What am I doing wrong. They still were good but didn't crisp up.

    3. Did you cut them up? I sometimes cut 1 slice into 4 triangles and leave and inch between them on the parchment. Your microwave may cook at lower watts than ours. Try cooking for 75 seconds or longer until you get the crispy crackers. Or buy a new microwave. LOL. These little guys are worth it. Hope this helped.

  2. Hello!

    I am in Canada and I'm not sure if I can find Deluxe American cheese (I will try but I don't recall seeing it at the grocery store). Is there any other equivalent types of cheese that might also work in this recipe?

    1. My Father says that parmesan works (the block, shreds or slices, not the green can) but I haven't personally tried it yet. I'm sure other cheeses would work with some experimenting. I just know that regular American does not work, which is why I stress Deluxe.

    3. Hi Ann, I've use Bordens and Kraft brand sliced cheese and they turn out great in my microwave. They have 2 carb per slice. Whereas, the Kraft Deluxe American slices are not wrapped separately and are 0 carb I believe. You can try having your deli slice the block cheese for you but have them read the carb count first. Hope this helps.

  3. Yum!! Just found your blog-thank you so much! I cooked mine for 55 seconds and think I'll try a little longer next batch as these aren't super crispy. However, that is not stopping me from eating them!

    1. What timing! Did you see that the Recipe of the Day today is another cracker recipe!? I've found that the parmesan ones http://www.lowcarblayla.blogspot.com/2012/06/parmesan-dill-crackers.html# have a bit more of a snap! so you might like them better. Also, I recently got a new microwave and am having trouble getting these Deluxe American crackers to get crisp in the new one. :( They are so temperamental to time and microwave types but when you figure out they sweet spot, they are so yummy!

  4. I just made these... They're great! 1 minute in my microwave. I had a two-plate rotation going on, to speed up making a tupperware container full, and I just re-used the paper over and over. My son loves them, too! Thanks for posting the recipe! -Beth

  5. I saw this yesterday while trying to find low carb snacks and I couldnt wait to try them!! We had church stuff last night then had to run to the grocery store so when we got home the hubby went to bed, but I had to make them. I took some downstairs because he LOVES cheez its, he loved them!! He actually got up and told me come on, you are showing me how to make more, so upstairs we went at 11:30 to make more!!! SOOOOOO GOOD!!! THANK YOU!!

  9. Have to try. So 1 slice of Deluxe American cheese cut into 16 squares. Maybe I'm slow...this seems like small chips or maybe I don't know what Deluxe American cheese is.

  12. I had to try them with 2% milk pepperjack cheese, they were crispy and crunchy with a kick! They were great! They have 2 carbs if that's what you watching, I'm doing WW so only 1 point+

  13. I was also able to use cheddar cheese and pepperjack, Munster cheese did not crisp up as nicely and took about 75 seconds, it could be because I cut them to thick

    1. I found that mine stick to the wax paper also, so I think I'll try using the parchment paper and see how they turn out.

  23. Colby-Jack cheese also works fantastic! Cut into 1" squares and cook on parchment (not wax) paper in the oven. I use them like chips and dip mine in guac and it's heaven!! I'm not sure if they store well, because I have never had them last longer than 1 day in my house.

  24. I used velveta slices, cut them into 16 pcs. added a dash of garlic powder and a small amount of parmesean cheese on top of each slice. Microwaved for 1 minute, opened up micro to let out steam, then microwaved again for 10 seconds. delish, and very crispy.

  27. Ok I had to post a comment because these are great!!!! I did just as the recipe called for except after 40 seconds I opened the door to let the steam out and cooked another 5 seconds. Husband and grandson loved them. I noticed something strange, after about 5 times it took longer and longer to get them crisp. It must be my microwave. No worries, more tomorrow. Thanks for posting.

  29. I just tried these, and they are the best thing ever! I put the ranch seasoning on them before I microwaved them, and it was delicious. I also tried a blend of dill, garlic, and onion, and those were great, too. Likewise with "everything" seasoning (sea salt, onion, garlic, poppy and sesame seeds). I am so glad to find a salty, crunchy snack that has almost no carbs!

  30. I originally purchased the Deluxe American Cheese and made these. They are wonderful. The grandchildren liked them so much that they went home and tried with Bakers & Chefs American Cheese Slices from Sam's Club. Turned out just as good and now they have a snack that I am glad to serve them.

  31. OMG. These are wonderful! Thank you for sharing! Such a simple idea, but I hadn't thought to do this yet. I have been making my fried cheese on the stove and dirtying up a pan. This is so much faster and easier to clean up. I used sharp cheddar cheese slice cut into 16 squares, 1 min in my microwave. AWESOME!

I have even made sriracha ones ranch ones w the spices..even a bbq rub...not the sauces... parm is like moon cheese.from starbucks...100 percent only cheese... gouda taste like swiss... and sargentos is zero carbs. I use trader jies vegan cheese...U can make whole slice size and top with low carb pizza sauce and pepperoni. .. even vegan pepperoni. .and shredded cheese. . and enjoy..instant low carb thin pizza. So so so good! Did I mention they we good? Yum ♡♡♡ vegan and keto friendly...we love the pizza.style.

  35. I used my Aldi's brand Deluxe American cheese and it worked perfectly! I was looking on line for low carb crackers and they are all so expensive. These are inexpensive, very low carb and delicious! Perfect bite size, too! I can't thank you enough!

  36. I buy bags of shredded cheese, put in little piles on parchment paper and bake on cookie sheet at 400 for 10 minutes. Try adding jalapenos or bacon. They're great!!!
